Molasses Sugar Cookies

3/4 cup shortening

1 cup sugar

1/4 cup molasses or dark corn syrup

1 egg

2 cups flour

1/2 teaspoon cloves

1/2 teaspoon ginger

1 teaspoon cinnamon

1/2 teaspoon salt

Melt shortening. Add sugar, molasses, and egg; beat well. Sift and add all dry ingredients. Mix well. Cover and chill 15 minutes. Preheat oven to 375°. Roll into 1-inch balls and roll each one in granulated sugar. Place on greased cookie sheet about 1 inch apart. Bake 8-10 minutes. Do not overcook! These should be moist and chewy.

Yield: 3 dozen

Notes:

  1. Used molasses as suggested

  2. Kept as round balls for baking vs flattening

  3. Found these to bake up nicely after about 8 minutes with a small amount of spread
