Raspberry & Brie Tartlets

1 8-ounce wheel Brie cheese, chilled

24 miniature phyllo sheets

2 tablespoons raspberry preserves

72 sliced almonds

Preheat the oven to 350°. Remove the rind from the cheese and cut the cheese into 24 small pieces. Place the phyllo shells on a baking sheet and fill each with a scant 1/4 teaspoon of the preserves. Top each with a small piece of cheese and 3 sliced almonds. Bake for 15 minutes or until the cheese melts.

Note: You may purchase fresh phyllo dough from your Greek grocer and prepare your own phyllo shells.

Yield: 2 dozen

Notes:

  1. Used pre-baked phyllo shells

  2. As the phyllo was already baked I cut the baking time to about 5 minutes, and just allowed the cheese to melt

  3. Went with slivered almonds as that’s what I had on hand
