Raspberry Thumbprints
Main Line Classics II
2 cups butter, softened
1 cup packed brown sugar
1 tablespoon vanilla extract
3 egg yolks
4 cups flour
2 cups (or more) finely chopped pecans
1 cup (or more) raspberry jam, jelly, or preserves
Mix butter, brown sugar, vanilla, and egg yolks in bowl. Add flour gradually, mixing well after each addition. Shape into 1-inch balls. Roll in pecans. Place on nonstick cookie sheets. Make indentation in each cookie with thumb. Fill indentation with jam.
Bake at 350° for 10 to 14 minutes or until brown.
Before she died in 1888 at one hundred years of age, Priscilla Robinson requested that her coffin be made of chestnut wood, so that when she went to hell she would “go through cracklin’.”
