Prosciutto, Goat Cheese, & Fresh Fig Roll-Ups

8 ounces thinly sliced prosciutto

6 ounces soft mild goat cheese, at room temperature

1-1/2 teaspoons pepper

3 fresh figs, trimmed and cut into halves lengthwise

12 arugula leaves

Lay 2 slices of the prosciutto on a work surface and spread with some of the goat cheese. Sprinkle with pepper and layer with 1 fig half and 2 arugula leaves. Roll up and secure with a wooden pick. Repeat 5 more times with the remaining ingredients.

Note: For a great salad, arrange the roll-ups on a bed of mixed greens or arugula on individual salad plates and drizzle with high quality olive oil and fresh lemon juice. You can even make them into sophisticated sandwiches.

Yield: 6 appetizers
